Super Sunday



This is the banana muffin recipe I am going to make on tuesday, I've been planning on it for a week but work and a serious cold have gotten in the way. But I'm excited about them, should make for a good breakfast. My chili recipe is going to be made on tuesday as well as dinners for the week :)

Ingredients

Recipe:

3 cups all-purpose flour

2 cups sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 pound unsalted butter, melted and cooled

2 extra-large eggs

3/4 cup whole milk

2 teaspoons pure vanilla extract

1 cup mashed ripe bananas (2 bananas)

1 cup medium-diced ripe bananas (1 banana)

1 cup small-diced walnuts

1 cup granola

1 cup sweetened shredded coconut

Dried banana chips, granola, or shredded coconut, optional

Directions

Preheat the oven to 350 degrees F.

Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.

Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve

Tomorrow I'm going to cook up a storm!

So as of right now I have tomorrow off! (Yeppie!) And I need to use up my produce from the produce junction!

So the cooking plan for tomorrow is:
Apple sauce (recipe to follow)
Apple Crisp (recipe to follow)
My chili (recipe on the blog)
Corn bread made with creamed corn- yum!
Sweet potatoes and yukon gold potatoes

Sweet potatoes will be made into sweet potato suffle at some point. And yukon golds will be used to make potato skins and skillet potatoes :)

Recipe of the Day

I think its time I start my Recipe of the Day series! Today is my chili- super easy on the stove or crockpot it, I will never know! Also you can add a pound of ground beef just brown that up first :)

Siobhans Chili
2 cups BBQ sauce
2 table spoons of mustard
2 tablespoons brown sugar
1 large onion
1 pack of chili seasoning
2 cans of kidney beans
2 cans of black beans
1 can of white beans
1 can of fire roasted tomatoes
On the stove top brown up the onions (and beef/turkey/chicken if desired). Then add the package of chili seasoning. Dump everything else in and let cook on medium until it starts to bubble, or throw it in the crock pot on low for 2-3 hours.

Top with shredded cheese, or sour cream or crushed up tortilla chips
